Tofu and Apple Spring Rolls with Spicy Peanut Dipping Sauce

1 pkg rice paper
1 bag of shredded broccoli and carrot mix
1 pkg extra firm tofu
1 Granny Smith apple
1/2  jalapeno pepper
2 cloves garlic
1 inch piece of ginger root
soy sauce
apple cider vinegar
coconut oil

Tofu Prep

1. Drain and press tofu a few hours prior to making these rolls
2. Once drained, cut tofu into strips
3. Melt 1 Tbs. coconut oil in saute pan
4. Fry tofu on high heat until crispy
5. Remove from pan and drain excess oil on a paper towel


1. Saute garlic and ginger  in pan on low heat
2. Chop the jalapeno pepper into small pieces, add to pan
3. Add shredded broccoli and carrot mix
4. Saute until all is tender
5. Add 2 Tbs. soy sauce and a few splashes of apple cider vinegar to deglaze pan
6. Mix well and remove from heat


1. Cut the apple into small, matchstick size strips, same length as tofu slices
2. Soak rice paper wrappers in warm water until translucent
3. Spread out rice paper, put a spoon full of broccoli mix, slice of tofu and a few slices of apple in the center
4. Wrap like a burrito

5. These can be eaten just like this or if you’re feeling naughty fry these bad boys up!

Peanut Dipping Sauce

2 Tbs. creamy peanut butter
2 Tbs. soy sauce
1/2 t. cayenne pepper
1/2 t. red pepper flakes
1 t. ginger powder
1/2 t. garlic powder
almond milk

Combine the first 6 ingredients in a sauce pan over medium heat
Add in almond milk until you reach a thin, smooth consistency
