It’s Pi Day!…So naturally we must provide you with a scrumptious vegan pie recipe…

Ginger Pear Pie

6 Bartlett pears peeled and sliced
1 1/2 T Lemon Juice
1 t Lemon zest
2 1/2 T Crystalized ginger finely chopped
1/2 t Cinnamon
1 1/2 T Cornstarch
3 T Flour
1/4 c plus 1 T Brown sugar
1/4 c Pure maple syrup
2 Pie shells (make sure if you do not make your own to check the label for butter!)
Soy milk
t Sugar

1. Put sliced pears in a bowl, add all ingredients and put in one pie shell.

2. This is when you can get creative with the top… I chose to cut the second pie dough into strips and make a lattice top, but you may finish your pie however you  please.. a streusel topping would be fabulous!

3. When you have prepared your pie, brush soy milk on the crust and sprinkle with a bit of sugar for a golden shine!

4. Bake at 375 for 40 min. tent pie crust after 40 minutes and bake for 15 more minutes

Serve as is or with a scoop of your favorite vegan icecream!

*If you notice pie crust is browning two quickly tent pie crust with foil earlier then 40 minutes.
