Peanut Butter Cups

Try keeping the boys (and the bees) away when you bake up a bouquet of our vegan Peanut Butter Cups.

Cupcake

1 1/2 C all-purpose flour
1 C Sugar
1/4 C + 2 T Cocoa powder
1 t Baking Soda
1/2 t salt
1/3 + 2 T Veggie oil
1 t Vanilla Extract
1 t Distilled Vinegar
1 C Almond or Soy Milk

Sift together flour, sugar, cocoa powder, baking soda, and salt
Add oil, extract, vinegar, and milk. Stir till smooth
Pour in prepared cupcake pan
Bake at 350 for 35 minutes or when a toothpick inserted comes out clean
Allow to cool completely

Icing

1/2 C Peanut Butter
1/4 C Vegan Margarine
2-3 C Powdered Sugar
2 T Almond or Soy Milk

Cream margarine and peanut butter
Add powdered sugar gradually
Add milk
Whip until smooth
Finally, spread or pipe icing on cupcakes and enjoy!
