Chocolate Chip & Pistachio Cookies

These Chocolate Chip & Pistachio Cookies are so good they will turn your ‘vegan hatin’ friends into cookie monsters with one bite. We recommend serving these little beauties with a tall glass of almond milk or better yet, a bottle of Andre.

Don’t forget to give thanks!


3/4 c.    vegan margarine
5/8 c.    sugar
5/8 c.    brown sugar
1/2 tbs. vanilla extract
1 egg      (follow instructions on your egg replacer box of choice)
2 1/8 c. all purpose flour
1 t.         baking soda
pinch    salt
1 c.        organic chocolate chips
1/2 c.    chopped pistachios

Preheat over to 350
Mix margarine, sugar, vanilla and egg replacer
Mix flour, baking soda and salt in seperate bowl
Combine dry ingredients with margarine mixture
Add chocolate and pistachios
Scoop onto cookie sheet (larger cookies tend to burn on bottom before done)
Bake for 8-10 mins
